Aimee Baldwin's Vegan Taxidermy, aka incredibly lifelike sculptures of birds and plants, really knock my socks off. Her background "ranges from a degree in digital media and theater arts, to professional experience in monument sculpture and prototyping mass-market Halloween merchandise." And yet, all that is translated into incredibly detailed and delicate birds and flowers, made from ordinary craft supplies. All I can say is, wow.
