Pumpkin Cranberry Cornbread

It was a little too dense for me. They turned into hockey pucks the next day.

I am so sorry it wasn't light for you. Usually when my cornbread is too dense it is because I have stirred the batter too much. You want to only stir this just until the dry ingredients come together.

We just had another batch tonight and it was delicious with a big pot of stew. We did the pumpkin cornbread muffin version and it was nice and light.

Don't give up on this one!
