
Being here in NY, the topic of conversation has somehow always centered on food and for some reason, bacon comes up a lot. Emily of Cupcakes and Cashmere and I were chatting food in a cab the other afternoon and she mentioned to me the technique of roasting bacon from Ina on Food TV. Why I never thought about doing this I have no idea. A great way to enjoy bacon without all the frying mess and grease.








Lots of brands of bacon come with those exact instructions on the label.

Alton did this ages ago... it works even better on a roasting rack, so the grease can drip off.

Using your broiler pan works great too. That's how I've always done it. It gets nice and crispy, but not quite as much fat as some drips down below.

Try microwaving it! If you have a microwave, just use any ov en safe flat dish and put a couple of paper towels on top of the dish. Place 4 or so slices bacon on the towel and cover with 1 paper towl to avoid splatter. Cook at about 1 minute per slice. I have noticed that applewood bacon takes about 1 1/2 minutes a slice. It's not greasy and nice and crisp!
