Rainbow Jell-O

Themed snack and story-time activities are great ways to entertain kids during the summer months. What often starts out as glee — hurray summer, no more school! — can quickly turn to boredom if you don't have a lot of activities on your schedule.

Rainbow Jell-O is a fun snack that kids can help make. Due to the extra gelatin added, it doesn't take as long as traditional Jell-O to become solid.

Rainbowjello Boxes

Ingredients

3oz boxes of Jello-O, one each: red, orange, yellow, green, and blue
2 packets gelatin
Water
Blue sprinkles
Something to make an eye on the fish frosting, circle candies
Pam cooking spray

Materials

Bowl
Microwave safe liquid measuring cup for boiling water in the microwave
Whisk
9"x13" glass pan
Fish cookie cutter

Directions

Step 1: Starting with blue, add half a packet of gelatin, blue Jell-O, and 1 cup of boiling water to a bowl. Whisk to combine, making sure all the Jell-O has dissolved. Pour into your pan of choice. Allow to set in the fridge until solid. Repeat this procedure, working your way backwards through the rainbow, until you've used all the colors.

Step 2: After the Jell-O has set, spray the cookie cutter lightly with Pam. Press the cutter down into the Jell-O, making sure it goes all the way to the bottom. Repeat all over the pan. Pull away the excess scraps first to help remove the fish easily.

Step 3: Put the fish on a plate, add the eyes, and sprinkle around with blue sprinkles for water.

Read Rainbow Fish, by Marcus Pfister, and sing the song Slippery Fish.

For older children, have a quick discussion about rainbows and the hows and whys of their occurrence in nature. Additionally, you can watercolor rainbows for an activity.
