I've done this before, and I found that the cleanest look came from removing the legs (or applying the oilcloth before assembling the piece of furniture), stapling the oilcloth to the underside of the table (avoiding putting staples where the legs would go) and attaching the legs. Working the corners is the trickiest part, but doing it this way, you don't see a "skirt" of oilcloth around the sides...unless that's what you're going for :)
